The key to the flavor lies in the
refreshing Japone sauce that's made
from a blend of two types of
traditionally brewed soy sauce and
infused with the umami of aromatic
vegetables like onion, garlic, ginger,
daikon, and carrot, along with some
lemon purée and vinegar. The
richness of the butter brings out the
savory flavor of the beef, while the
touch of acidity gives the dish a
light, clean finish. If you're looking
to switch things up, try grinding
some of the freshly milled black
pepper on the side for an added
layer of aroma and heat.
